If I purchase Juice Box will I get the same looking galleries as using simpleviewer but it will be compatible with all browsers?
Juicebox is an HTML 5 image viewer which does not use or rely on Adobe Flash Player at all (so there is no Flash Player vs Mobile Player).
How Juicebox displays a gallery is partially dependent on the device and/or screen size used to view the gallery.

You can override the Screen Mode used to display the gallery (so that the gallery looks the same on all devices and in all browsers) by setting the screenMode configuration option (Pro only) to either SMALL or LARGE (rather than the default value of AUTO).
However, it is not possible to override the Input Mode used (Mouse Mode vs Touch Mode).
Does it allow for pinch zoom function on ipad's etc that the simpleviewer doesn't?
If you are extremely careful and precise, it is possible to pinch-zoom within a Juicebox gallery (unless the viewport has been locked in the embedding web page) but as Juicebox uses touch gestures for gallery controls (such as swiping to navigate between images) gestures can interfere with one another and it can be difficult to pinch-zoom.
