I do not know.
However, you could force your SimpleViewer gallery to be displayed by the Mobile Player in all browsers (whether Adobe Flash Player is installed and enabled or not) by setting the useFlash Embed Code Parameter to 'false' in your gallery's embedding code.

For example, in your existing gallery here: http://www.kookaburracreekretreat.com.au/gallery.html
... you would change:

simpleviewer.load("sv-container", "100%", "700", "222222", true, flashvars);

.. to:

simpleviewer.load("sv-container", "100%", "700", "222222", false, flashvars);

In doing so, the gallery would initially display a grid of thumbnails with no main image in all browsers and on all devices.

If using svBuilder-Pro to create or edit your gallery, the 'Use Flash' option can be found in the 'Customize -> Embed Options' section.

As you have discovered, it is not possible to change the dimensions of the thumbnails in the Mobile Player.
The cut-off you are describing may be due to the fact that your gallery has fixed dimensions of 1000px x 1000px and may not be able to be displayed in its entirety on certain monitors and mobile devices.
You could perhaps change the width of the gallery to 100% so that it fills the width of its parent container. However, if the parent container has a fixed width of 1000px, then the same issue will arise.
